No bake – homemade peanut butter – fig bar

Calling all the peanut butter lovers to try these tasty breakfast oatmeal based bars😀 These vegan + gluten free chocolate peanut butter and dried figs, oatmeal bars are super snacks on the go, or for breakfast your children will enjoy them a lot. They’re made with just 5 ingredients, and are dairy-free, protein-rich, vegan and gluten free! Healthy 🍀😍

INGREDIENTS:

  • 8 Sun Dried Figs (soaked for 10min) – @figura 
  • 1 cup unsalted, natural creamy peanut butter
  • 1/2 cup nuts ( almonds or pecans, peanuts….)
  • 1 tablespoons pure maple syrup
  • 1 ¼ cups gluten free rolled oats

Topping: Melted Dark chocolate
COMBINE all INGREDIENTS TOGETHER.
Simply add all the ingredients into a large mixing bowl and give it a good stir to combine. Set aside.
If not sticky enough add 1 spoon plant based milk.
Transfer the batter into a rectangle pan that you previously covered with parchment paper. This is very important to prevent the batter from sticking to the pan and to make it easier to lift the bar from the pan pulling out the paper.
Put into a freezer for app 30-45min

Freezing the bar is a technique in no-bake recipes that sets the ingredients together quickly. While the bar freezes and sets, you have the time to melt the chocolate for topping.
Pour the melted Choco ganache onto the bar and return the bar to the freezer for about 10 minutes to set the top layer.
Store them in the fridge in an airtight container.
